1. Wash and soak the glutinous rice (I personally like to use Thai Suya glutinous rice, I usually soak it the night before, and if you are in a hurry, soak it for at least 1 hour), drain the soaked glutinous rice and set aside;

2.1 Put a box of minced meat in a pot, add ingredients 2, add seasoning, mix well and stir in one direction, add chicken juice in batches, let the meat "eat" the delicious chicken juice little by little. After the meat filling is stirred, it is still a bit sticky. At this time, put on disposable plastic gloves and beat the meat ball repeatedly in the bowl (a bit similar to beating the dough when baking). Repeat this several times. When the meat is no longer sticky, the meat filling is ready.

3.2 Chop the soaked mushrooms into small pieces and set aside; wash and peel the carrots (or water chestnuts, lotus roots, etc.) and chop into small pieces; chop the green onions and ginger and set aside;

4. Wash and drain the Chinese cabbage, apply a thin layer of oil on it, and place it in the steamer;

5. Take the minced meat prepared in step 3, take one tablespoon of it as the standard, scoop it up with a spoon, roll it up with both hands, and beat it alternately with both hands. After the minced meat is formed into round balls, wrap it with the glutinous rice in step 1. Be careful to press it gently with your hands so that the rice grains are more tightly embedded in the meat, and place it on the Chinese cabbage in step 4. In this way, place the meatballs in order;

6. Pour water into the steamer and bring it to a boil over high heat. Put the steamer rack with the meatballs in it, cover and steam for about 20 minutes, then turn off the heat. Steam for 3-5 minutes without removing the lid. Bring the steamer rack to the table directly or place it on a plate with fresh vegetable leaves and serve.
