1. Remove the legs, shell and gills of the swimming crab, clean it, cut it into two cloves, coat it with flour and set aside; cut the onion into large cloves; cut the leek into sections; roughly chop the red pepper; and flatten the garlic.

2.1 Crack the crab thighs with the back of a knife;

4. Heat oil in a pan and sauté onions, leeks, garlic, red pepper shells, and shredded ginger. Add the crab legs and stir-fry first, then add all the crab meat and stir-fry. Pour in light soy sauce to season, add sake, and stir-fry for 2 minutes before removing from the pan. Cook over high heat throughout the process without adding water.
