1. Old dough is the dough that was not used up from the previous day. Put it in a cool place and let it ferment naturally. It will have a wine aroma. If it has a smelly and sour taste, do not use it. It may be spoiled by too high a temperature. If the temperature is too high, remember to put it in the refrigerator to ferment.

2.1 Drain the mung bean juice, put the mung beans into a frying pan and heat until the water is dry, then add sugar and salad oil, mix well and let cool for later use.

3.2 This is the mung bean paste I made myself. Wash the mung beans the day before, put them into the inner pot of the rice cooker, fill it with water, add one and a half cups of water to the outer pot of the rice cooker, and cook them.

4.1 Pour the mixed main ingredients onto the table and knead into a smooth dough for the first fermentation, which takes about 20 minutes.

5.2 Put all the main ingredients in a bowl and mix well

6. Put the fermented dough on the table and knead it into long strips, cut it into small dough of 60g, roll it into a round shape, wrap it in mung bean dough, and then press it down into a flat round shape.

7. You don't need to put oil in the frying pan, or you can use a paper towel dipped in salad oil to lightly wipe the frying pan, but make sure to wipe it until you can hardly feel the oil. Put the pancake into the frying pan and remember to use a low gas fire to fry.

8. Covering the pot can make the pancake fried faster. Remember to turn it over frequently and also check whether there is water in the moisture on the pot lid. If water from the pot lid drips into the pot, it will easily cause the pancake to burn and stick.

9. Fry both sides until golden brown and serve. Look, isn’t it tempting?
