How to make a bowl of fragrant braised noodles

Wash the pork belly, cut it into pieces, add two spoons of soy sauce, a little salt, and you can also add a little oyster sauce for better flavor. First, mix the above seasonings evenly, and finally add three spoons of corn starch and mix evenly, and let it marinate for about 10 minutes.

2.2. Wash the sword beans and slightly spicy green peppers and soak them in salt water for 6 minutes. At the same time, peel and cut half a pound of potatoes into pieces. The tubers should be of moderate size. If they are too big, they will not be easy to cook. If they are too small, they will become muddy and it is not good. Dice the garlic cloves for later use.

3.4. Heat up a pan with oil (it is recommended to use a hot pan with cold oil to avoid too much smoke), put in the marinated pork belly and stir-fry until it is half cooked, add the sword beans and stir-fry for two minutes, then add the green pepper cubes and season for a while. At the same time, put the potato cubes in the pan and stir-fry everything together in the pan for two minutes. "Your taste is too single, you are too meaty, and you are too vegetarian. Let's work together to add some of each other's taste, so that we can blend into a new taste." Add the boiled water, the water level should almost cover all the sword beans, which should account for about 3/4 of the pot capacity. When the soup starts to boil, add a little salt, two tablespoons of soy sauce and chopped garlic to season. Reduce the heat, cover the pot and simmer the base dish for 5 minutes. You can clearly see the bubbling soup spreading the prepared hand-rolled noodles evenly on the base dish. The left picture above shows the noodles when they are initially spread out. After simmering for 5 minutes with the lid on, remove the lid and use chopsticks to turn the noodles over. When turning, still pay attention to the principle of spreading the noodles evenly. The side near the bottom of the vegetable soup has already absorbed the flavor and color, as shown in the upper right picture. You can also see that the soup near the bottom of the vegetable has been almost reduced by half. Cover the pot and simmer for another 3 minutes before turning off the heat. Do not open the lid immediately; simmer for another 2 minutes after turning off the heat.
