Add some pickled ginger and pickled peppers as shown in the picture. Add chopped green onions and garlic. Seasonings: light soy sauce, dark soy sauce, salt, starch, bean paste and peppercorns.

9. Rinse with clean water seven or eight times until the water becomes clear. Then boil a pot of water, throw the kidneys in to blanch them, and take them out immediately without blanching them through.

10. Put the blanched kidney into cold water immediately. You can see the kidney spitting out a lot of blood (oh, this description is so funny hahaha). Then wash it several times with tap water until the blood stops oozing out. This way the kidney will not smell fishy no matter how you fry it.

11. Cut the pickled peppers into horse ear shapes, and cut the garlic and pickled ginger into thin slices.

12. Pour oil into the pan, keep the heat at medium-low, add the bean paste and peppercorns and stir-fry briefly. Pay attention to the heat so that they do not burn.

13. When the oil turns red, add kimchi and garlic and stir-fry until fragrant.

14. Add the sauce: 1/4 spoon of dark soy sauce, 2 spoons of light soy sauce, 2 spoons of clear soup, 1 spoon of starch and appropriate amount of salt. At this time, the aroma in the pot has already come out, add the fungus and stir-fry briefly.

15. When the fungus starts to fry, it means the heat is right. Add the kidney and stir-fry until cooked through. Sprinkle a little cooking wine and mix in the sauce.

16. Add scallion slices.

17. Remove from heat. In the past, I could only eat stir-fried food with pure bean paste in France. After eating this, I was thinking...what kind of crap did I eat before?
