1. Main ingredients: gutted mandarin fish, onion slices, ginger slices, garlic slices, salt, pepper, chicken essence, sugar, soy sauce, balsamic vinegar, rice wine, starch, water, cooking oil, Sichuan pepper, eggs, red pepper slices, yellow pepper slices, and green pepper slices.

2. Clean the mandarin fish, remove its head, and then cut the fish open along the bones with a knife.

3. Then cut it into small pieces of 3 cm square and put it into a bowl. Sprinkle with peppercorns, salt, pepper powder and rice wine and mix well.

4. Add an egg and mix well. Marinate for 30 minutes.

5. Mix the sauce. Put salt, pepper, chicken essence, sugar, starch, soy sauce, balsamic vinegar and rice wine in a bowl. Pour a little water into the bowl and mix well. Finally, add half of the scallion, ginger and garlic slices for later use.

6. Add appropriate amount of dry starch to the marinated mandarin fish and mix well.

7. When the oil pan is 60% hot, put the fish pieces in and fry until cooked. Remove from the pan.

8. After taking out the fried mandarin fish, increase the oil temperature to 70% to 80% hot, pour the fried mandarin fish pieces in again and fry them again.

9. Fry the skin until golden brown and crispy, then remove and set aside.

10. Heat another pan, add a little oil, add onion, ginger and garlic slices and stir-fry briefly, then pour in the colored peppers.

11. Add the bell peppers into the pan and stir-fry for a while, then add the mandarin fish pieces.

12. Add the sauce into the bowl and stir-fry for a few times over high heat.

13. After stir-frying evenly, you can remove from the pan and place on a plate.
