3. Slice the garlic, dice the onion, and mince the ginger for later use.

4. Cut the green and red peppers into diamond-shaped pieces and set aside.

5. Then, add a little baking soda into the chopped meat and mix well.

6. Marinate for 30 minutes and set aside.

7. To make the sauce, first put a little salt in a bowl, then put pepper, chicken powder, sugar, rice wine, soy sauce, balsamic vinegar and a little dry starch, then pour in an appropriate amount of water and mix well.

8. Wash the pork that has been marinated with baking soda for 30 minutes and squeeze it dry.

9. To season, add salt and pepper, mix well, then pour in a little rice wine and mix well.

10. Scoop in two tablespoons of dry starch, about 25-30 grams.

11. After adding the dry starch, mix it evenly with your hands so that the starch adheres evenly to the meat. It is better to keep it drier. If it is too dry, add a few drops of water and mix it evenly. Do not use too much water; it should be thicker.

12. Heat the wok on the fire, pour in a proper amount of cooking oil, heat the oil to 50% hot, start frying the meat, and put the pork into the pan piece by piece.

13. Do not move the meat after putting it into the pot, so that it can solidify and take shape, then stir it to make it fried evenly, and take the meat out immediately when it is half cooked.

14. Raise the oil temperature to 70% to 80% hot, then fry the meat again.

15. Fry the meat until crispy and the skin is golden brown.

16. Leave a little oil in the pan, add onion, ginger and garlic and stir-fry briefly.

17. After the aroma comes out, add the bell pepper and stir-fry evenly.

18. After stir-frying evenly, pour in the fried meat slices.

19. Then, quickly pour in the blended starch, stir-fry over high heat for a few times and then serve.

20. Serve immediately after arranging the dish while it is still hot. This will keep the dish crispy and taste very delicious.
