Lamb spine recipes

Lamb spine is the spine of the sheep. It has a relatively high nutritional value, especially a strong flavor. It can be used to make various delicious foods. Especially in winter, eating a proper amount of it can help dispel the cold and keep warm. When cooking lamb spine, be sure to blanch the bones and remove the floating foam. It is best to add some cooking wine and ginger when blanching to help remove the fishy smell.

Method 1

Material

1 pound of spare ribs, 2 potatoes, some rock sugar, some salt, a little dark soy sauce, a little light soy sauce, a little green onion, a little ginger, a little star anise, a little cinnamon, a little bay leaf, a little pepper, a little red dried pepper, a little cooking wine

1. Put water in the pot, put in the ribs, bring to a boil, pour in cooking wine, cook for three minutes, remove, rinse off the blood foam, and drain the water

2. Peel the potatoes, wash them, cut them into small dices and set aside

3. Pour oil into the pot, heat over low heat, add onion, ginger, star anise, cinnamon, pepper, bay leaves, red pepper, and fry until fragrant.

4. Pour in the spareribs and stir-fry, pour in the cooking wine and stir-fry, then pour in the light soy sauce, a little dark soy sauce, and rock sugar, stir-fry evenly to color

5. Pour water (hot water is best) into the bones, bring to a boil over high heat, then simmer over low heat for half an hour.

6. Remove the foam, remove the star anise, cinnamon, bay leaves, pepper and other ingredients, add salt, and continue to simmer for 20 minutes

7. Put the potatoes into the pot and continue to simmer for 20 minutes until the potatoes are cooked. Turn the heat up to reduce the sauce, sprinkle with chopped green onions and a little MSG, stir well and serve.

Method 2

Material

15g Cordyceps flower, 1 sweet corn, 500g spine, 20g Euryale ferox, 6 red dates, 20+ wolfberries

1. Rinse the spine with water and rinse off the foam

2. Wash the cordyceps flowers, gorgon fruit, red dates, and wolfberries separately, and chop the sweet corn into pieces; (Some people on the Internet say that cordyceps flowers should not be washed, but I don’t think I can accept that. Just like some people say that fresh mushrooms should not be washed, I have to wash them before I feel at ease.) Put all the ingredients except wolfberries and sweet corn into the soup pot, add 8 bowls of water

3. Cook over high heat until the water boils, then simmer over low heat for 1.5 hours; add corn and wolfberry and continue to cook for half an hour

4. Add salt to taste. Don’t throw away the cordyceps flowers that have been used in soup, they are delicious.

Indications

1. Low back pain due to kidney deficiency. Use a sheep spine, smash it, cook it with garlic and scallions, and drink a little wine. Another recipe: Use a sheep spine, pound it into pieces, add a piece of Cistanche deserticola and five pieces of Amomum villosum, boil them with water, add green onions and soy sauce and make soup.

2. Deafness due to kidney deficiency. Use a sheep spine, roast it, grind it into powder, add one liang each of rolling stone (calcined, quenched in vinegar seven times), Atractylodes macrocephala, Astragalus membranaceus, dried ginger (fried), and white Poria cocos, and three fen of cinnamon, and grind them into powder. Take 5 coins each time and decoct in water

3. Urine paste. Burn and grind the sheep spine, and take two cents of it with the decoction of elm bark.
