Peas have comprehensive and balanced nutrition. Pea seeds consist of seed coat, cotyledons and embryo. The protein, fat, carbohydrates and mineral nutrients contained in dry pea cotyledons account for 96%, 77% and 89% of the total nutrients in the seeds, respectively. Although the embryo contains protein and mineral elements, its proportion in the grain is very small. The seed coat contains most of the undigestible carbohydrates in the seeds, and also contains relatively high levels of calcium and phosphorus. Albumin, globulin and glutenin account for 21%, 66% and 2% of pea protein respectively.

The biological value (BV) of pea protein is 48%~64%, and the performance ratio (PER) is 0.6-1.2, which is higher than that of soybeans. The reason why the nutritional value of pea protein cannot be fully utilized is its poor digestibility. Pea seeds are rich in nutrients, containing 23.4% protein, 1.8% fat, 52.6% carbohydrates, as well as carotene, vitamins B1 and B2, etc.

Medicinal

Peas are sweet in taste and neutral in nature. They enter the spleen and stomach meridians. They have the effects of replenishing the middle qi, stopping diarrhea, regulating the body's defense system, promoting urination, eliminating carbuncles and swellings, and relieving lacteal poison. It has certain therapeutic effects on symptoms such as athlete's foot, carbuncle, milk stagnation, spleen and stomach discomfort, hiccups and vomiting, abdominal distension and pain, thirst and diarrhea.

Peas are sweet and mild in nature, and have the effects of harmonizing the middle and lower qi, promoting urination, and relieving sores. Cooking peas can quench thirst, promote lactation and reduce swelling. Drinking fresh pea juice can cure diabetes. Grind peas into powder and apply it to the affected area to treat carbuncles and hemorrhoids. Green peas and edible peas are rich in vitamin C, which can effectively prevent bleeding gums and prevent colds.
