How to make spicy rabbit in dry pot

1. Cut the rabbit meat into pieces, add a little salt, cooking wine, bean powder (to make the meat more tender), oil, and stir-fry for about 15 minutes.

3.2 Ingredients: dried chili peppers, Sichuan peppercorns, wild peppercorns, pickled peppers, pickled ginger, ginger, and garlic, cut into pieces and set aside.

4.1 When the aroma comes out, add dried chili peppers, peppercorns, bean paste, pepper powder, pepper powder, a small amount of rock sugar and oyster sauce.

5.2 Pour in oil and heat until 70% to 80% cooked, add in seasonings (wild pepper, pickled ginger, pickled chili peppers, ginger, garlic) and stir-fry together.

6. After all the ingredients are fried until fragrant, add the cooked rabbit meat, non-easy-to-cook side dishes, and celery, and stir-fry over high heat.

7. When the stir-fry is almost done, add the side dishes that are easy to cook. You can add some soy sauce to adjust the color. Because the bean paste itself is very salty, you can add some salt and chicken essence according to your taste. Stir-fry until cooked and then serve.
