1. Choose lamb hind leg meat.

2. Use scissors and a knife to cut open the bone along the grain.

3. Roll it up with plastic wrap. One leg roll.

4. Freeze in the refrigerator and lay flat.

The freshly made mutton rolls are soft. Freeze them for about 24 hours. When they are frozen solid, you can cut them. This way, whether you are eating hot pot or stir-frying with green onions or cumin at home, you can cut a fresh portion, which is clean and hygienic.

What are the ways to eat mutton rolls?

Method 1: Stir-fried Lamb Rolls with Scallions

Ingredients: lamb rolls, green onions, oil, salt, peppercorns, soy sauce, white wine, dried chili peppers, and cooking wine.

1. Prepare the above ingredients.

2. Cut the dried chili into strips, cutting them diagonally. Thaw the lamb rolls and put them in a pot with cold water.

3. Pour in cooking wine and blanch over high heat. Blanch the meat rolls until cooked.

4. Then rinse the mutton rolls with water to remove the foam on the surface.

5. Pour oil into the pan and heat it to 70% hot, add dried chilies, Sichuan peppercorns, and half of the scallions and stir-fry until fragrant. Add the blanched lamb rolls. Stir-fry quickly and evenly.

6. Pour in soy sauce, white wine, salt and season. Add remaining half of the scallions.

7. Stir-fry quickly over high heat until evenly combined and serve.

Method 2: Stir-fried mutton sauce with coriander

Ingredients: lamb rolls, coriander, ginger, sugar, Lao Gan Ma spicy black bean sauce, chicken essence.

3. Add the lamb rolls, stir-fry until the meat changes color and becomes soft, then add coriander.

4. Add 1 spoon of cooking wine, then add 1 tablespoon of Lao Gan Ma spicy black bean sauce.

5. Add a little sugar and stir-fry evenly.

6. Finally, add a little chicken essence and serve while hot.
