Ingredients: 1 salted egg white, 1/8 teaspoon cream of tartar, 2 tablespoons extra fine powdered sugar, 1/4 teaspoon vanilla extract, 1 tablespoon cocoa powder, 1/2 teaspoon instant coffee powder. Method: 1. Beat the egg white and cream of tartar vigorously with a whisk (or use a blender on high speed) until a stable foam is formed. Gradually stir in sugar, vanilla extract, cocoa, and coffee until combined. 2. Spoon the mixture onto a baking sheet lined with aluminum foil. Make about 12 small piles, with 5 cm between each. 3. Place the baking tray in an oven preheated to 120 degrees and bake for 40 minutes, or until the outer layer is hard. Turn off the oven and let the meringues cool slowly in the oven for 1 hour. During the cooling period, do not open the oven door.
