1. The hot pot base I packed back has a lot of chili peppers

2.1 Soaked and processed bamboo shoots, mushrooms, yellow lily, fungus, and kelp

3.2 Soak all the dry goods that need to be soaked

5.212 Boil the soaked dried food in water. Boil the harder bamboo shoots for a little longer.

6. Cut the bean curd sheets, dried tofu, dried radish and vermicelli. (I prepared too many ingredients, and I didn’t add the dried radish because I was afraid I wouldn’t be able to finish it. I also failed to add rice noodle skin, as it broke into pieces when stir-fried. After all, rice noodle skin is not wide rice noodle!)

7. This is the beef slices that were packed back

8.1 Wash and chop celery and coriander

9.2 Add some starch, soy sauce, cooking wine and a few drops of sesame oil to the beef slices and marinate them. Slice the bacon too

10. If you have a bag of spicy peanuts at home but did not finish them in time after opening the bag, some of them will become skinny. Put them in a pan and dry-fry them to remove the moisture. It will be crispy again after it cools down. It will be delicious if you sprinkle it on the fried dry pan later.

11. Put two tablespoons of oil in the pot. After the oil is hot, I put some spicy hot pot base brought back from Chengdu. The amount of base should be controlled according to your tolerance for spicy food. After the base is fried, add onion, ginger and garlic slices to stir-fry until fragrant

12. Fry the bacon and beef first

13. After the meat changes color, add other ingredients that can withstand frying and stir fry

14. Add the packed chili base and stir well

15. Add cooking wine and soy sauce

16. Sugar. I think adding some sugar to the hotpot can enhance the flavor and make the spicy taste more soothing and tempting. There is salt in the base, and the soy sauce also contains salt. I tasted it and it tasted right, so I didn't add any extra salt.

17. When it’s almost time to serve, add the celery and stir-fry for another minute before turning off the heat.

18. Sprinkle spicy peanuts and coriander on the dish
