1. Prepare the ingredients.

2. Peel the yam and steam it. (You can also wash and steam with the skin)

3. Use the back of a knife to press the steamed yam into a paste. Knead it more with your hands to make it more delicate.

4. Roll the yam paste into small balls.

5. Coat evenly with a layer of starch.

6. Fry in oil.

7. Fry until golden brown, then remove from oil and drain.

8. Pour out excess oil, leaving a little oil at the bottom of the pot, and add an appropriate amount of white sugar.

9. Stir-fry over medium-low heat to allow the sugar to be heated evenly.

10. Turn to low heat and continue to stir-fry until melted.

11. The fried syrup is light yellow (amber) and this is the best time to add the raw materials.

12. Pour in the fried yam balls. Stir-fry quickly to evenly coat the yam with the sugar juice, then remove from heat.

13. Remove from heat and serve.
