How to make the best steamed pork with rice flour

Steamed pork with rice flour is a very famous delicacy. This dish tastes fat but not greasy, and the meat is very tender. The most important thing is that you won’t feel the absence of so much fat. However, it is still difficult to make authentic steamed pork with rice flour. The steamed pork with rice flour made by many people does not taste so good. This is mainly because the ratio of rice flour and meat is not so correct, which makes it feel a bit greasy when eaten.

Preparation ingredients

Main ingredients: pork belly with skin (8 liang) Side ingredients: ginger, scallion (25 g), fried rice noodles (25 g), sweet noodle sauce (0.8 liang), sugar (0.5 liang)

Production Process

1. Scrape the pork belly skin and cut into 10cm long and 0.5cm thick slices

2. Add fried noodles, sweet noodle sauce, sugar, a little starch water, shredded ginger and green onion, mix well, steam in a steamer for 5 hours, and serve.

Main ingredients: pork ribs (streaky pork) (500g) lotus root (250g)

Accessories: Rice (75g)

Seasoning: sweet noodle sauce (20g), white sugar (3g), pepper (1g), rice wine (10g), cinnamon (3g), star anise (2g), shallot (5g), clove (2g), ginger (2g), salt (4g), MSG (2g), soy sauce (15g), fermented bean curd juice (20g)

Production Process

1. Cut the pork into strips 4 cm long, 2.5 cm wide and 1 cm thick. Dry the strips with a cloth and place in a bowl.

2. Add salt, soy sauce, sweet bean curd sauce, minced ginger, rice wine, MSG and sugar to the dried pork and marinate for 5 minutes.

3. Put the rice in an iron pan and fry it on low heat for 5 minutes. When it turns yellow, add cinnamon, cloves and star anise and fry for another 3 minutes. Remove from heat

4. Grind the fried rice into fish roe-sized powder to make spiced rice noodles

5. Scrape and clean the old lotus root, remove the lotus root nodes, and cut into 3 cm long and 1 cm thick strips. 6. Add 25 grams of refined salt and five-spice powder to the lotus root strips, mix well, and put them in a bowl to season.

7. Mix the marinated pork with five-spice powder

8. Place the pork mixed with five-spice powder neatly in the bowl with the skin attached to the bottom, and place the pork strips on both sides.

9. Put the bowl with pork and the bowl with lotus root into the steamer and steam it for 1 hour.

10. First put the steamed lotus root in a plate as the bottom, then turn the steamed meat over the lotus root, sprinkle with pepper and chopped green onion.

Craft Tips

1. When marinating pork, you must first drain the moisture from the meat, add 3 grams of salt and other seasonings to allow the flavor to penetrate the meat.

2. Grind the rice flour into corn-sized pieces, mix the lotus root with 1 gram of fine salt, and steam the meat until it is cooked and juicy.

Method 3

Cut the meat into pieces, not too big or too small, just the right size for each person. I also added some pork ribs in it. Look carefully at those white lumps, they are the fat!

Prepare a scallion and cut it into sections; slice the ginger; and add appropriate amount of peppercorns.

Potato dice.

Marinate the meat with salt, light soy sauce, dark soy sauce, Sichuan pepper powder, hot pepper powder, pepper powder, and sugar, and add ginger slices and scallion segments.

Heat the pan, pour in the flour, add peppercorns and stir-fry. If you feel that the powder is a little sticky to the pan, pour a little oil into it and continue frying until the powder turns golden yellow, and it's done!

Pour the marinated meat and potatoes into the pot and mix well with flour.

Put it in the steamer, heat high for 10 minutes, then change to medium heat and steam for about half an hour. The specific time is determined by each individual.
