Ingredients: 1 pound of dried chili sauce, 2 pounds of mutton fat, half a pound of lard, and half a pound of salad oil.

Auxiliary ingredients: 1 liang each of scallion segments and ginger slices, 3 grams of star anise, 3 grams of cinnamon, 10 grams of tangerine peel, 2 grams of cloves, 5 grams of galangal, 5 grams of pepper, 3 grams of fennel, 3 grams of bay leaves, 5 grams of galangal, 2 grass fruits, and 2 grams of licorice.

Steps:

1. Cut lard and mutton fat into small pieces and put them in a pot. Use low heat to refine the oil and discard the oil residue.

2. Pour salad oil into the pan, add all the auxiliary ingredients and chili sauce, and simmer over low heat for about 1 hour. If the scallion whites turn yellow during the cooking process, you can pour some cooking wine into the pot.

Ingredients: half a pound of chili powder, 2 pounds of mutton fat, half a pound of lard, and half a pound of salad oil.

Preparation method: After refining the mutton fat and lard according to the above method, pour in salad oil and add all the auxiliary ingredients. After frying the auxiliary ingredients on low heat to bring out the aroma, remove all the auxiliary ingredients and discard them. When the clean hot oil is about 60% cooked, pour it into the chili powder and mix well.
