How to make meatballs tender and delicious

There are certain tricks to making meatballs that are tender and delicious. First of all, you should pay attention to the selection of meat. It is best to choose meat that is three-layered and has five or six strips. This way it will taste better and be more tender. The fat-to-lean ratio of the meat should be 3:1. In addition, it is best not to use a meat grinder. The meat filling you make yourself will taste better. You can add an egg to the prepared meat filling so that it will taste more tender.

1. Choose the meat.

Making meatballs has very high requirements for meat. You must use the clip meat, which is the part where the pig's front leg is connected to the pig's body. If you press it lightly with your fingers and it feels greasy, it is most likely fed with泔水. If it is elastic and slightly sticky, the meat is of good quality and fresher. 3. After chopping, add a small amount of salt

Beat an egg, add chopped green onions and minced ginger (the green onions and ginger must be finely ground), and a little Sichuan pepper powder (this is very important). Stir with your hands to combine evenly. If children don’t like to eat vegetables, mothers can chop the vegetables and add them in at this step, which will make the meatballs more delicious and nutritious.

4. Make balls.

With good meat filling and a good shape, the elderly and children at home will have more appetite. Wash your hands (or wear sanitary gloves, but wearing gloves may not be very convenient), stir the meat filling again, then roll the meat filling into a ball the size of an egg with your left hand, clench your fist, and tighten your index finger as you move downwards, so that a round meatball will appear.

If you are making vegetable meatball soup, wait until the water starts to bubble before putting the meatballs in, to avoid the bubbles from breaking up the meatballs after the water boils. Pinch the meatballs a little bigger when putting them in first, so that all the meatballs can be taken out of the pot at the same time. (The meatballs will become tough if cooked for too long). If you are frying it, heat the oil for 50% heat, then put the meatballs in, roll them twice and remove from the pan. They will be shaped, have good color and are very healthy. Finally, make the sweet and sour meatballs. When braising the meatballs, it will be healthier and more flavorful if they are cooked thoroughly.
