1. Wash the hawthorn. Use a knife to cut a circle on the waist of the hawthorn, and the hawthorn will have an equator. Then dig out the core and stem of the hawthorn.

2.1 Put the washed hawthorns into a stainless steel pot, then add water until it almost covers the hawthorns, and add sugar. (The best ratio of hawthorn to sugar is 2:1, but in order to reduce sugar intake, I reduced it by 50g. It is still quite sweet, but a little sour.) Cover the pot and cook over high heat.

3.2 Remove the core, stalk and stem of all hawthorns. Then rinse with water and drain.

4. After boiling over high heat, skim off the foam with a spoon, cover the pot, and simmer over low heat for 30 minutes.

5. After 30 minutes, the hawthorn has become soft. If there is still water in the pot, open the lid, turn on high heat and cook until it is dry. (If you want to eat hawthorn jam, you can take this opportunity to mash it with a spoon.)
