3.2 Make mint milk: Add mint leaves to milk and heat it in a small milk pot. After it cools down a little, add a little milk to the mint leaves and crush them in a food processor. Use a sieve to filter out the leaf residue. Pour the mint milk back into the small milk pot and add 40 grams of sugar. Continue to heat on low heat. Do not boil. Remove from heat when small bubbles appear on the edge of the pot.

4. Whipped cream, 200 ml, add into mixing bowl, use whisk to beat until 60% fluffy, that is when lines start to appear but it can still flow and become smooth.

5. Mix the mint egg yolk milk paste in (3) and the whipped cream in (4). After cooling, add the chopped chocolate, put into a container and freeze.

6. Take it out and stir it every 20 to 30 minutes. After 2-3 times, it will be semi-solidified. If you want to shape it, you can put it in a container and freeze it.
