Place the fried eggplant on top of the minced meat and pour the remaining broth from the frying pan onto a plate. 15. Put enough cold water in the pot, set up the steaming rack, put a layer of plastic wrap on the plate, and place it on the steaming rack. 16. Cover the pot and steam over high heat for about 10 minutes until the eggplant is cooked. 17. Take out the steamed eggplant and pour the juice from the plate into a small bowl. 18. Place the steamed eggplant on another plate and put the minced meat on the surface of the eggplant. 19. Put the soup in the small bowl into the pot and heat it over medium heat until the soup boils. 20. Mix 1/2 teaspoon cornstarch (dry starch) with an appropriate amount of cold water to make water starch and pour it into the pot 21. Stir in one direction with a spatula 22. Make the soup thick and transparent, turn off the heat, this is the fried sauce 23. Use a small spoon to scoop the sauce and pour it on each eggplant. 24. Sprinkle some green onions for garnish.
