How to make sweet wine

1. Soak rice: Buy an appropriate amount of glutinous rice (usually a few pounds of rice can produce a few pounds of fermented rice). First wash the glutinous rice and then soak it in clean water. Generally, it is enough to soak it until it can be crushed by hand. Note that when it is hot, you need to change the water when soaking rice.

2. Steam rice: drain the soaked rice and steam it in a clean steamer. Make sure the rice is steamed evenly and thoroughly.

3. Pour water to cool down: Pour tap water evenly on the steamed rice to cool it down quickly. Be sure to completely lower the overall temperature without missing any.

4. Control water: Drain the cooled rice.

5. Mix the sweet wine medicine: Put the drained rice into a clean bowl, add an appropriate amount of sweet wine medicine according to the amount of rice and mix it evenly (make sure to stir it evenly). Dig a hole in the middle, then cover it with a clean lid and place it in a warm environment. After about 3 to 4 days, when the wine comes out of the hole in the middle, you can eat it.

6. After fermentation, the product is in the state of fermented glutinous rice. The glutinous rice becomes soft and mellow after sufficient fermentation, and tastes sweet with a slight wine flavor. Then divide into clean containers and refrigerate.
