When vitamin C meets metal ions, it accelerates oxidation and destruction, reducing its nutritional value. Therefore, it is not advisable to eat yam after eating pork liver. 4. Yam with cucumber, pumpkin, carrot and winter squash. Cucumber, pumpkin, carrot, and winter squash all contain vitamin C-degrading enzymes. If they are eaten with yam, the vitamin C will be decomposed and destroyed.
