How to make a jade lion head

1. Main raw material map.

2.1 First chop the lean meat to 70% of the desired degree, then add the diced lotus root and diced fat and chop together.

3.2 Wash the ingredients and cut the lean meat, fat and lotus root into small cubes for later use.

4.1 Add appropriate amount of Daxida barbecue sauce (add according to proportion), 1/2 tablespoon of light soy sauce and a little onion and ginger water, mix well and let it stand for 10 minutes. (Because children don’t like to eat scallions and ginger, otherwise add the chopped scallions and ginger to the minced meat at the end, it will be more fragrant)

5.2 Transfer the chopped meat into a bowl.

6.1 Cut the egg tofu into small round slices and place them around the edge of the plate.

7.2 Add 3 tablespoons of water starch in batches and stir until slightly stiff.

8.1 Add appropriate amount of lotus seeds. (I have already steamed the lotus seeds. The method is in the recently released Tremella and Lotus Seed Soup. I usually steam more at a time and freeze them so that I can take them out whenever I need them.)

9.2 Wash your hands and apply a thin layer of oil on them. Take an appropriate amount of minced meat, first roll it into a ball and shape it, then flatten it.

10. Close the top and turn it upside down in the middle of the egg tofu.

11. Leave a few lotus seeds on top of the lion's head and garnish with a wolfberry.

12. Pour into a pot of cold water, bring to a boil over high heat, and steam for about 10 minutes.

13. After steaming, there will be some soup in the plate. Use chopsticks to gently cover the egg tofu, carefully pour the soup into the pot, then add appropriate amount of water starch and boil it, then drizzle in a few drops of sesame oil and mix well.

14. Pour evenly over the finished dish.
