The reason why the soup is milky white is that it is cooked over low heat and stewed for a long time. Before stewing the duck bones, you need to use the back of a knife to gently break the larger duck bones to let the bone marrow flow out, which will make the soup white. Put the duck bones into a pot with cold water, then add a little green onion and ginger, bring to a boil over high heat, then simmer over low heat. The longer the time, the whiter and more delicious the soup will be. Don't skim the oil specifically, just skim off the foam. Also make sure to add enough water at the beginning, and never add cold water in the middle.
