Cornstarch (15g)

Ginger (appropriate amount)

Cooking wine (15 ml)

Garlic (5 cloves)

Breading process: (flour: cornstarch: spicy fried chicken powder = 2:1:1)

1) Before coating, make sure the surface of the raw materials is fully moistened, but must be drained, otherwise the coating will not be even.

2) When coating with flour, bury the raw materials in the prepared flour, pinch the two ends of the raw materials with ten fingers, and roll and knead them in the same direction for more than 5 times (use more flour).

3) Soak in clean water for about 2 seconds to make the powder on the wings moist, that is, the dry powder covering the raw materials becomes paste (do not turn it over during soaking to prevent the water from washing away the batter. If it is washed away, coat it with powder again)

4) Pick up and drain the water, then put it into dry powder and repeat the above powder coating and kneading method for 5-10 times or more. Stop kneading when the surface is completely and evenly covered with scales.

5) The breaded ingredients should be fried immediately, otherwise it will affect the formation of scales. The frying temperature should be controlled within 165 degrees, fry for 5-6 minutes, until the color turns light golden brown. Use a toothpick to prick the thickest part to see if there is any blood coming out. If there is blood, fry for another minute.

Wash the chicken wings and drain

Prepare peanuts, dried chili peppers, garlic, scallions, and ginger slices

Chop the chicken wings into pieces, add salt, cooking wine, soy sauce, ginger, shallots and cornstarch, mix well and marinate for more than 2 hours

Put the peanuts in a cold pan with cold oil and fry until fragrant. Remove from the pan

Then put the chicken pieces in and fry over medium heat.

Fry until the chicken changes color and turns yellow on both sides.

Turn to high heat and fry the chicken until golden red. Remove from heat and drain the oil.

Pour out all the oil, add dried chili peppers, onions, ginger and garlic into the oil pan and stir-fry until fragrant

Add the chicken and stir-fry for one minute, then turn off the heat and serve.

Put it in a bowl and sprinkle with chopped green onions and peanuts and serve

Tips:

1. The chicken should be marinated before cooking. 2. When frying peanuts, keep the pan and oil in a cold place. Once the oil temperature rises, the peanuts will become crispy. 3. Fried chicken should be deep-fried over medium heat until cooked through, then deep-fried again until crispy.
