6. When taking out, put it together with the plate into a basin of cold water to cool it down.

7. When it is no longer hot, the dough can be easily removed. Spread it flat on an oiled plate and brush a layer of oil on top to prevent it from cracking and sticking. Finish making all the batters one by one.

8. There is basically no difference in taste between the purple amaranth juice cold noodles and ordinary cold noodles. After the cold noodles are cut, you can add your favorite seasonings and mix well. Personally, I think mashed garlic and chili oil are necessary.
