1. Use a small grinder or peeler to scrape the lemon peel;

2. Put butter in a bowl, and then use a larger bowl with hot water to beat the butter;

3. Add sugar, salt and vanilla extract and beat with a whisk at high speed, then add lemon peel and rum, and beat for a while. The finished product made from the whipped butter will have a better aroma and a more delicate surface texture.

4. Add egg liquid and beat with a whisk at medium to low speed until evenly mixed;

5. Mix the flour with the baking powder before sifting it in, and sift the flour in twice with a sieve;

6. When using a rubber scraper to mix the batter, do not stir in one direction only. Sometimes you should make a cross and sometimes stir from the bottom to the top.

7. Apply a layer of odorless vegetable oil on the surface of the pan so that the finished product is easy to demould after baking;

8. Pour the batter into the mold, but don’t fill it too full, about 80% full is best, then put it into the preheated oven, bake at 180°C (about 350°F) for about 8-10 minutes or until the surface is golden brown.
