6. Add sugar to the egg whites and squeeze a few drops of lemon juice.

7. Beat with an electric whisk until soft and foamy.

8. Lift the whisk and the lines will not disappear.

9. Grease the sides of the cheese mold with butter and line the bottom with baking paper. Preheat oven to 180 degrees.

10. Add one third of the egg white paste to the egg yolk paste and mix evenly by flipping and cutting.

11. Pour this part of the paste back into the egg white paste and mix evenly in the same way.

12. Mix the paste.

13. Pour into the mold. This recipe is just the right amount for a cheese mold. Gently shake out the large bubbles.

14. Take a deep baking tray, add hot water at about 60 degrees, put the cheese mold on it, and the water depth should be about 3CM. Oven at 180 degrees for 30 minutes, then 170 degrees for 30 minutes.

15. Baked cheesecake.

16. Remove from the mold while hot. The texture and taste will be better if eaten after refrigeration.
