Chao's Braised Pork Recipe

5. After frying the sugar, add onion, ginger, garlic, peppercorns and star anise and stir-fry. If you like spicy food, adding some chili will make it more fragrant.

6. Add the blanched meat and continue to stir-fry. This step is mainly for coloring and try to stir-fry out the oil in the meat.

7. Add dark soy sauce. Here is some general knowledge: the names of light soy sauce and dark soy sauce originated in Guangzhou. Light soy sauce tastes fresh and salty, and has a light color, and is suitable for mixing vegetables. Dark soy sauce and fermented black beans have strong flavors and rich colors, which are suitable for coloring dishes.

8. Add cooking wine. I add rice wine here. I heard that rice wine is a good thing, so now I use rice wine instead of cooking wine when cooking, which does not affect the taste of the dishes.

9. Add water or broth, salt, soy sauce, five-spice powder, wolfberry, cinnamon, etc. It depends on personal taste, but it tastes good with just the basic ingredients. Bring to a boil over high heat, then simmer over low heat for about an hour, checking at any time whether the meat is cooked through.

10. Cook over high heat until the sauce thickens and it’s ready to serve. It smells so good.
