How to make rice wine egg drop soup

1. Prepare 1.5KG glutinous rice (note it is glutinous rice) and sweet wine yeast. Wash the glutinous rice and soak it for 24 hours. I usually soak it the night before and cook it the next night. Soak until the rice can be crushed by hand. The light is not very good for taking pictures at night, I hope you can see clearly.

2.1 Let the steamed glutinous rice cool to about 30 degrees. If you don't have patience (I don't), you can just rinse it a few times under cool boiled water. I have a water purifier at home, so I just flushed it. Note that you should use disposable gloves when moving the rice into the basin and rinsing the water. If you need to use your hands, make sure to wash your hands clean and free of oil. The same goes for basins, they cannot be stained with oil.

3.2 Put the soaked rice into the steamer and steam it thoroughly. The rice inside is not easy to cook, so even if the rice on the surface is cooked, you should still check whether the rice underneath is cooked. Steam for about half an hour.

4. Sprinkle the sweet wine koji evenly on the glutinous rice and mix well. Use a rolling pin to poke a hole in the middle of the basin. Seal the bowl with plastic wrap and let it sit for the glutinous rice to ferment. In summer, 1-2 days is enough, but in winter, insulation is needed.

5. After 2 days, open the plastic wrap and you will smell the sweet aroma of fermented glutinous rice! I also saw that the water in the middle hole had flooded to the same level as rice. At this time, you can put the rice wine in the refrigerator to stop fermentation, and you can eat it slowly!

6. Add two spoonfuls of rice wine, add water to the pot and bring to a boil, beat in the eggs (it is already very sweet, no need to add sugar, of course if you particularly like sweet food, you can add sugar as needed), sprinkle with wolfberries when serving. If you like thicker soup, you can thicken it with starch.
