Chicken and kelp soup recipe

1. Remove the head and butt of a whole chicken. The wings and drumsticks can be used for stewing, stir-frying or braising. It would be a waste to use them to make soup. Take the front and back of the chicken, cut them in half, and wash them with clean water.

2.1 After blanching, remove the chicken and pour out the water.

3.2 Pour cold water into the pot and skim off the blood foam.

4.121 Prepare two star anise, cut the green onion into sections, and slice the ginger, and set aside.

5.212 Pour clean water into the soup pot, the water level should be enough to cover the chicken. Bring to a boil over high heat.

6. Bring the water to a boil and place the chicken into the soup pot.

7. Bring to a boil again and add scallion, ginger and star anise.

8. Cover and simmer on low heat for one hour.

9. For kelp, choose the thin kind, not the salty kind.

10. Wash the kelp with clean water. This is what it looks like without soaking.

11. After 1 hour, poke the chicken with chopsticks. If it goes in easily, it means it is done.

12. Cut the kelp into several pieces and put it into the chicken soup.

13. Add salt and beef powder, cover and cook over medium heat for 5-8 minutes.

14. Pour out, take a sip, and you will feel refreshed.
