How to make dumplings with amaranth filling

Many times, we envy others for having a relative who can cook, so that we can enjoy delicious meals after get off work. Instead of envying others, it is better to do it yourself. Below we will introduce to you the method of making dumplings stuffed with amaranth.

1. Mix the dumpling flour with warm water into a slightly harder dough, cover with plastic wrap and let it rise for 20 minutes.

2.121 Blanch the amaranth in boiling water for a short while. When the amaranth wilts, remove it from the water and squeeze it dry.

3.212 Remove the roots of amaranth and wash it clean.

4.1 Add chopped green onion and ginger to the minced pork.

5.2 Use a knife to cut into small pieces. Don’t cut it too small or it will lose its chewiness. It tastes better if the pieces are larger.

6. Add soy sauce, rice wine, sugar, salt, sesame oil and MSG.

7. Beat until smooth.

8.Finally, add the chopped amaranth and mix well.

9. Roll the proofed dough into a long cylinder and pinch it into small pieces with your hands. If you don’t know how to pinch it, you can cut it with a knife.

10.1 Roll it into a round piece that is thicker in the middle and thinner around the edges.

11.2 Sprinkle some flour evenly on the small dough, roll it into a ball, and flatten it.

12.Put the whipped filling in the middle of the round slice.

13. Wrap the dumplings neatly and place them on the lid. (My way of making dumplings is to squeeze them, so the edges are a little big and they look a little ugly, haha).

14. Bring water to a boil in a pot, put the dumplings in, and use a spoon to gently push them along the edge of the pot to prevent them from sticking.

15. After putting the dumplings in, boil the water again, add a cup of cold water, cover the pot and continue cooking.

16. After adding water twice, bring to a boil again. When the dumplings swell up, it means the dumplings are cooked.

17. Remove from the heat and serve on a plate.
