1. Dali rawhide

Dali rawhide is a unique local delicacy made from pig skin. It is also one of Dali’s traditional dishes. The selection and production of raw hides are very particular about the methods. Good raw hides are made from the pig’s hind legs, tenderloin, and waist. Roast the pig skin until it turns yellow, wash it, and eat it raw with seasonings. The raw skin can be eaten directly with seasonings, or it can be mixed with other raw meat. It has a delicate taste, without any fishy smell, and is spicy and fragrant.

2. Roasted Bait Blocks

Anyone who travels to Dali must know Erkuai, which is one of the most representative snacks in Yunnan, and roasted Erkuai is one of the most famous Dali snacks. Generally, roasted bait blocks are sold on the streets. On small stalls, the stall owner sets up a brazier with a wire mesh on top, on which white bait blocks are placed. After the bait is cooked, you can add hot sauce, sweet sauce, sesame paste, braised tofu, peanut powder and other seasonings, and you can also wrap it with fried dough sticks and eat it.

3. Xizhou Baba

Xizhou Baba is very popular in Dali, usually priced at 3 to 5 yuan each, which is cheap and delicious. Xizhou Baba is also called Po Su Baba, and is a very delicious Dali snack. Xizhou Baba has color, fragrance and taste. Xizhou Baba comes in two flavors: sweet and salty. The salty flavor is seasoned with yoga salt, pepper and chopped green onion, and the sweet flavor is seasoned with ham, diced meat and rose sugar. Both are very popular.

4. Milk fan

Rushan is one of the 18 strange things in Yunnan. Rushan is a food made with cow's milk, which is solidified in acid water and made into a fan-like shape. It is a traditional snack, very similar to Western cheese. There are many ways to eat Rushan. It can be fried, deep-fried, stewed, stir-fried, or even rolled into a roll and eaten with various fillings. The most common way to eat it in Dali is to fry it.
