Dried hairtail fish recipes

Hairtail is a seafood rich in various nutrients and is also a very popular food. Since it is a seafood, a lot of effort is required in its storage. There are two common types of hairtail on the market, one is frozen and the other is dried. Both methods can greatly extend the shelf life of hairtail, especially drying it. So, what is the correct way to dry hairtail fish?

1. How to dry hairtail fish

1. First of all, you need to choose a good sun drying area, preferably one with no hospitals nearby and surrounded by glass windows to increase sunlight exposure. The roof of the plastic shed is made of organic plastic, which is non-toxic; and the house should be equipped with a powerful exhaust fan and ultraviolet sterilization lamp. Its purpose is to ensure the safety of the product.

2. Dry the fish on the drying platform. The sun terrace is made of wire mesh. The mesh diameter is 2 mm. If the mesh is too large, the fish will easily leave marks when drying; if the mesh is too small, it will not be conducive to ventilation. When drying, products from different batches must be separated and well labeled. The method of drying fish is: first start from the back of the fish, and the fish cannot overlap or touch each other, leave a little distance, and keep it flat. The back is generally dried for about an hour, then turn it over to the belly side of the fish and dry it for about two hours with the same requirements; then turn it over to the back and dry it for one hour,... and repeat this cycle, and keep relevant records.

3. Dried fish that is not dried that evening should be placed in a cold storage and continued to be dried the next day. Generally, it only takes about 3 days to dry. During the drying process, professional technicians will conduct random inspections at irregular intervals, and inspections must be carried out once in the morning and afternoon every day. The contents to be checked include whether the dried fish has any peculiar smell and the moisture content of the dried fish. After work every day, the drying yard must be sterilized with ultraviolet light for 1 hour. After drying, the dried fish can be prepared for packaging when its moisture content reaches about 40%.

Hairtail is rich in fat, protein, vitamin A, unsaturated fatty acids, phosphorus, calcium, iron, iodine and other nutrients. Hairtail is warm in nature and sweet in taste.
