When pickling red pepper slices, you can wash the fresh and slender red peppers with clean water, remove the stems, cut them into slices with a knife, add an appropriate amount of soy sauce, and then add an appropriate amount of salt and chicken essence to mix well. Marinate for a day. Take a few heads of garlic, peel them and cut the garlic cloves into thin slices. After mixing well, marinate for another half an hour. After taking them out, add sesame oil to enhance the flavor and they are ready to eat.

2. Method 2 for pickling red pepper flakes

When pickling red peppers, you can wash them, cut them into small slices, cool and dry them, then prepare table salt at the ratio of two kilograms of red peppers to fifty grams of table salt, put the salt in the red pepper slices, add pepper powder and gummy candy powder, then add appropriate amounts of white sugar and white wine, mix well, bottle and seal for pickling, and the red pepper slices will be pickled after a week. This is also the method of home-made chopped peppers.

Red peppers can also be pickled together with cucumbers. Cucumbers and red peppers can be prepared in a ratio of four to one. Cut the cucumbers into strips and the red peppers into slices, add salt and marinate, remove the water from the marinade, add soy sauce, ginger, white wine and sugar, and finally add some peppercorns and garlic slices. Mix well and marinate. It will take about ten days for the cucumbers to be pickled. At this time, the cucumbers will be slightly spicy and the spicy taste of the red peppers will become lighter. The two taste particularly good when eaten together.

Choose fresh peppers, carrots and ginger, wash them and dry them. Cut the chili peppers into small pieces, leaving the stems so that they can absorb the flavor.

Slice the carrots into even-sized and thick slices, cut the ginger and garlic into thin slices.

Put the above prepared ingredients into a bowl, add salt, soy sauce, vegetable oil, MSG and white wine, then stir up and down evenly, turning it over 2 to 3 times a day.

At the same time, wash the peanuts, steam them in a steamer, then soak them in hot water for about 30 minutes, take them out and put them in a basin for later use.

Turn over the ingredients in the bowl containing peppers and carrots for about 3 days, then put the steamed peanuts at the bottom of the bowl. After a day, turn it upside down again. After about a week, turn it over once a day. After two weeks, you can put the ingredients in the bowl into a jar. This will ensure better pickling effect.

After about three weeks of pickling, it can be eaten. At this time, the pickled peppers, carrots and peanuts are all flavorful, fragrant and crispy, and are a good condiment for rice.
