Pour oil into a hot pan and heat it to 50% hot, then add star anise, cinnamon, peppercorns and fennel, and stir-fry over medium-low heat until fragrant.

At the same time, pour the remaining seasonings (including minced ginger and garlic) into a high-temperature resistant bowl, stir evenly, then pour in the fried spice oil. Note that when pouring the oil, you need to use a denser strainer to filter out the spice residue. After pouring the oil in, stir evenly with a spoon so that the seasoning is evenly heated and emits fragrance.

Pour the dried potato slices into a bowl, drizzle with the freshly made chili oil, and stir evenly with chopsticks.

Finally, sprinkle with chopped green onions and serve. This delicious Sichuan snack, spicy potato chips, is ready! The taste is really good, instantly making ordinary potatoes become both beautiful and interesting, isn’t it!

Heat oil in a pan and pour it into the chili powder bowl twice (the first time is when the oil is hot, and the second time is after turning off the heat, when the oil temperature drops a little, so that the chili oil is not easy to get sticky). Then put the prepared potato slices in a small bowl. Add salt, MSG and a little more sugar (to taste sweet), pour in the prepared chili oil and sesame oil, and mix well. Then when should peppercorns be used? Because the taste of peppercorn oil can be slightly worse. The taste is not that pure. If you like a stronger spicy flavor, you can make chili oil. You can put the peppercorns in oil, fry them until fragrant, then take them out and use the oil to pour over the chili powder.
