How to make original soda crackers

1. First dissolve the yeast in warm water (normal temperature water can be used in summer), because the cookie dough needs a short kneading time and the granular yeast is not easy to knead evenly. Mix the flour with sugar and salt first, then dig a hole and bury it~~~

2.1 Just knead it into a uniform dough. No need to have ribs, and no need to force it to be particularly smooth

4.1 Then use a rolling pin to dry it into thin large sheets. Just like the thickness of the dumpling skin~~~be sure to sprinkle flour to prevent sticking. But don't sprinkle too much

5.2 Place in a warm and humid place to ferment for 1.5-2 hours. Make sure to send it to the right place. But don't overdo it. The dough is very crispy inside and does not bounce when pressed.

6. Finally, use a kitchen knife (because there is no wheel knife, a wheel knife is of course better!) and use a ruler to cut into small, even pieces. I cut 4 original soda crackers into 5cm rectangles. Look ~ the cuts made with this kitchen knife are very neat. Be careful not to cut completely through, just make a deeper mark. Prevent the cookies from shrinking and bulging when baking. Then prick evenly with a fork. Finally, place it in a warm and humid place and let it ferment for about 15 minutes. Start a little bit. Don't have too much, it will rise further when put into the furnace. Spray a little water and sprinkle a little salt before putting it into the oven. If there is no spray, the water vapor will increase during the final fermentation. Put more hot water in the confined space. Let the biscuits have steam

7. Preheat the oven to 220 degrees (soda biscuits need to be baked at high temperature and fast to expand, similar to European bread) and bake in the oven for about 10 minutes. Turn off the heat when it starts to color. Remove from oven and place on rack to cool

Although there are many steps to make original soda crackers, it is not difficult at all as long as you master them carefully.
