1. Bring water, sugar and butter to a boil, then turn off the heat. Add flour and mix into a dough. Let it cool and refrigerate for 24 hours.

2.1 Tear the dough into small pieces, add material C and knead until the gluten is fully expanded (a very transparent film can be pulled out), and let it rise for 10 minutes.

3.2 Tear the soup seed (high-gluten flour: 75g, sugar: 6g, water: 54g, unsalted butter: 30g) into small pieces and add the medium-gluten flour (high-gluten flour: 225g, sugar: 10g, salt: 5g, yeast: 3g (1/2 tsp + 1/4 tsp), light cream: 70g, milk: 70g) dough ingredients, knead until the surface is smooth, ferment at room temperature for 40 minutes, and refrigerate for 48 hours.

4. Divide into three portions, each portion is about 130 grams, roll them into balls and relax for 10 minutes; after relaxing, deflate the dough and flatten it into an oval shape, fold the long side inward by 1/3, and fold the other side inward by 1/3 as well, to form a long dough sheet. Then roll the dough from top to bottom into a cylindrical shape and wrap the opening inside.

5. Put the prepared dough into the mold and place it in a warm place for secondary fermentation. When the dough is 90% full in the mold, the fermentation stage is completed. (With a lid, let it ferment until it is 90% full, and without a lid, let it ferment until it is 80% full. Apply egg liquid on the top of the dough)

6. Put it into the oven preheated to 190 degrees, with upper and lower heat, middle layer for 33 minutes.
