Wash the pork belly, cut into minced meat and set aside.

Chop all the green onions and ginger into fine pieces and set aside.

Prepare 10 grams of Pixian spicy bean paste, 10 grams of sweet noodle sauce, and 10 grams of pepper powder.

Put lard in a wok, when the oil is 50% hot, add the diced pork and stir-fry until it changes color and turns white.

Add chopped green onion and ginger into the pan and stir-fry until fragrant.

Add pepper powder, Pixian spicy bean paste and sweet noodle sauce to season.

Fry over low heat until red oil comes out, stirring constantly, dry the minced meat, Pixian bean paste and sweet noodle sauce, then sprinkle in 3 grams of pepper powder and stir well.

Wait until the water in the pot is fried dry and the sauce is all turned into oil, then serve in a bowl and the rice noodle sauce is ready.

Put oil in the pan and fry the scallions until they are golden brown.

Pour in Pixian bean paste, June fragrant bean paste, and curry cubes, and stir-fry evenly over low heat.

Pour in the minced meat, stir-fry thoroughly until the water comes out, then add soy sauce and cooking wine. Add water and bring to a boil over high heat, skim off the foam, add the marinated food bag, and simmer over low heat for 40 minutes.

Add salt, cook over high heat until the sauce thickens, then add chicken stock.

The prepared meat sauce can be stored in a fresh-keeping box and refrigerated for three days. You can add quail eggs or chicken eggs when cooking the meat sauce.

The bone soup is cooked. Boil the rice noodles in boiling water for 8 minutes (for dry rice noodles, not soaked, you can decide the time according to your own preference). Rinse the cooked rice noodles with cold water and drain.

1. Because the meat sauce is prepared in advance, it is very quick to make! It doesn’t even take 10 minutes.

2. It is best not to use the water used to cook rice noodles to make soup, because the vacuum-packed rice noodles bought outside usually have some soursop added to them. It is better to pour away the cooked water.
