1. Buy oyster mushrooms that are relatively dry. Mushrooms that contain too much water are usually sprayed with water or soaked in water by the merchants. When we choose, we squeeze the roots of the mushrooms with our hands. If water seeps out, we won't buy them.

2. When buying oyster mushrooms, choose those with neat edges and slightly curled downwards. Because the normal shape of oyster mushrooms is that the edges are slightly curled and relatively neat. If the edges have become flat and cracked, it means that the mushroom is old and the nutrients have been lost in large quantities. In addition, the cracked openings are prone to bacteria and dust entering, making them unclean.
