Enter the second kneading stage, and continue to toss the dough as hard as before to increase the gluten strength in the dough. The time required is about half of the first stage.

8. Did you see it? The kneaded dough will be able to be pulled into a thin film like this. Because of the participation of butter, it is less likely to break than in the first stage. At this time, the dough already has sufficient gluten and elasticity.

9. Start the first fermentation, wrap with plastic wrap, in summer, the temperature can be completed in about an hour, in winter, you need to create a fermentation temperature or extend the fermentation time

10.How long does it take to know if the dough is fermented? Dip your finger in flour and poke a hole in the dough. If the hole does not shrink, it means the fermentation is complete.
