How to make lamb strips with spring bamboo shoots

1.1Pour water into a clean pot, add ginger slices, scallions, cooking wine, and blanch the mutton in cold water.

2.2 Soak the mutton in clean water for 2 hours, and wash it clean after the blood is soaked out

3.1 Cut spring bamboo shoots into strips, wash rapeseed and cut into quarters, blanch each in boiling water, and set aside

4.2 In another pot, add enough water at once, add the blanched mutton, star anise, grass fruit, licorice, tangerine peel, ginger, scallion, cooking wine, soy sauce, etc., bring to a boil over high heat, then turn to medium heat and cook until the mutton is cooked through, take out and let cool, cut into strips about half a finger wide, and place in a deep dish or large bowl

5. Pour less sesame oil than cooking oil into a clean pot, add star anise, scallion segments, and ginger slices, stir-fry over low heat until fragrant, then add the meat soup, cooking wine, and light soy sauce, bring to a boil, pour over the mutton, and steam over high heat for 20 minutes.

6. Remove the onion and ginger, push the mutton and juice into the pot, add bamboo shoots and rapeseed, add soy sauce, salt and the soup from cooking meat, and cook for 5 minutes to let the bamboo shoots and rapeseed absorb the flavor.

7. Add water starch to thicken, drizzle in a few drops of sesame oil and mix well before serving (you can also take out the meat and vegetables first, thicken the sauce and pour it on the meat)
