Method 1

Ingredients: half a chicken, 10 dried mushrooms, 2 scallions, 3 slices of ginger, 1 dried chili pepper, half a red pepper, a little chives, 1 star anise

Accessories: salad oil, salt, cooking wine, light soy sauce, dark soy sauce, sugar, mushroom stewed chicken

1. Wash the chicken, drain and cut into pieces. Rinse the mushrooms with water and soak them in warm water.

2. Slice the ginger, cut the green onion into sections, cut the red pepper into diamond shapes, remove the stems of the soaked mushrooms, rub them in running water and clean them, filter the water used to soak the mushrooms and set aside

3. Pour a little oil into the pan, add the chicken pieces and stir-fry until the oil changes color. Add ginger, onion, dried chili pepper, and star anise, add light soy sauce, dark soy sauce, and add a little cooking wine, sugar and salt to taste after the chicken pieces change color.

4. Pour the filtered mushroom water in until the chicken pieces are completely covered by about 2CM. Bring to a boil over high heat and then simmer over medium-low heat. When the meat is about 80% cooked, add the mushrooms and simmer together.

5. Continue to stew until the soup thickens, then add red pepper and green onion, mix well and serve.

Method 2

Ingredients: 2 local chicken legs, 6 dried mushrooms, 12 red dates, 2 slices of ginger, 1 tablespoon of wine, and 1 teaspoon of salt.

Production Process

1. Chop the chicken legs into small pieces, blanch them to remove the blood, and then rinse them;

2. Soak mushrooms until soft, remove stems, and soak red dates until soft. Put all the ingredients into a stew pot, add 1 tablespoon of wine and 6 cups of boiling water. Add 2.5 cups of water to the outer pot, cover and steam for 40 minutes;

3. Add salt to season before serving, mix well and serve.

This soup can also be cooked directly on the stove over low heat, but the water should still be boiled before adding the ingredients, and the soup should be cooked over low heat so that it does not become cloudy. Do not add salt before the chicken soup is cooked, so that the chicken will be tender and the soup will be fresh.

Method 3

Main ingredients: chicken, mushrooms

Accessories: onion, ginger, cooking wine, dark soy sauce, rock sugar, salt

1. Wash the chicken and chop into small pieces. Soak the mushrooms in warm water and cut into pieces.

2. Put the chicken pieces into the pot, add water and shredded ginger, boil for half a minute, turn off the heat, and wash off the blood foam;

3. Place ginger slices and scallions on the bottom of the pot, add the blanched chicken and soaked mushrooms;

4. Pour in the filtered mushroom soaking water, add cooking wine, soy sauce and rock sugar;

5. After boiling, cover and simmer on low heat for half an hour;

6. Finally, add salt to taste and reduce the sauce.
