First, choose the best beef

If you don’t like this taste, then choose some lean meat. Normal beef should be bright red in color and have elastic texture, so you need to pay special attention when choosing.

Second, how to process beef

Take the freshly bought beef back and soak it in clean water for 10 minutes, then rinse it several times with warm water. After the water has dried, apply sesame oil, salt, chicken essence, cooking wine, ginger and garlic juice on the surface of the beef. Then place the beef on the chopping board and gently pat it with a bottle for half an hour (this will help the beef to absorb the flavor). After half an hour, cut the beef into appropriate-sized cubes and put them in a bowl for later use.

Third, how to deal with potatoes

After briefly rinsing the potatoes, use a special peeling knife to gently scrape off the skin of the potatoes. Be careful not to use too much force when scraping, otherwise it will easily waste material. After peeling the potatoes, use a kitchen knife to cut them into cubes. The size of the cubes should be about the size of an adult's thumb. After cutting, you cannot soak it in clean water as before. This dish of potatoes and pork just needs the starch in it. Because during the cooking process, adding a little water to the pot can force out potato juice, and using this juice to mix with rice is just right.

Fourth, it is not advisable to use a large fire to burn

Braised potatoes with pork is a stewed dish, so it is not advisable to use high heat during the cooking process. Moreover, potatoes contain a lot of starch, so if you use high heat to cook them, they will easily become burnt, and the taste will drop sharply. After mixing the potatoes and beef evenly, add an appropriate amount of water to the pot, cover the pot and start stewing. Note that you cannot open the lid frequently during the stewing process.
