2.1 While waiting for the bread to ferment, you can make the coffee Mexican batter. First dissolve instant coffee powder in 1/2 teaspoon of boiling water. Pour the dissolved coffee liquid, powdered sugar and softened butter into a large bowl

3.2 After the intermediate fermentation is completed, knead the dough into a ball again and put it into the bread paper tray for the second fermentation (the best fermentation environment: temperature 35-38 degrees, humidity 85%)

4. Stir evenly with a whisk, and add the beaten egg liquid three times and stir evenly

5. Pour in the flour and use a whisk to stir directly into a smooth batter as shown in the picture. Add the chopped cashews into the batter (you can also replace it with other nuts you like) and mix well.

6. After the bread has fermented to twice its size, put the coffee Mexican batter into a piping bag. Cut a hole of appropriate size at the front of the piping bag. Squeeze the batter in circles on the surface of the dough. Do not fill it up, just cover 1/2 of the surface. Put it in the oven preheated to 180℃ and bake for about 15 minutes. During the baking process, the coffee Mexican batter will melt and flow down, covering the entire surface of the bread.
