800g clams, beer, water starch, cooking oil,

Shredded red pepper and green onion

5 small chilies, 1 tablespoon dried shrimp, 15g ginger, 4 cloves garlic,

50g small onion

1/2 tablespoon Chinese bean paste, 1 tablespoon dark soy sauce

, 1 tsp sugar, 1 tsp fish curry powder

2. Steps for making spicy fried clams

1. Soak the clams in sea water for 1 hour to allow the clams to spit out the sand. Seafood sellers can provide seawater. Then rinse the clams with clean water, drain and set aside.

2. Use a mortar to put the chili peppers, dried shrimps, ginger, garlic and onions together and crush them lightly.

3. Mix Chinese bean paste, dark soy sauce, sugar, and fish and meat curry powder in a bowl and set aside.

4. Pour cooking oil into a hot pan, add the spices prepared in step 2, and sauté over medium to high heat. Pour in the sauce prepared in step 3 and a little water and heat until boiling.

5. When the clam shells open, add water starch to thicken.

6. Finally, serve on a plate, add shredded red pepper and green onion for garnish, and enjoy while hot.

Tips

1. Choose fresh clams to get the best taste.

2. Huadiao wine can be used instead of beer.

3. Only Chinese bean paste can be used. Do not substitute Japanese or Korean bean paste because their tastes are different.

4. You can also do this with other types of clams, but different clams have different saltiness, so you need to adjust the saltiness accordingly when cooking.

4. The harm of eating too much clams

It may cause diarrhea, may cause allergies, may affect physical recovery, may cause food poisoning, pregnant women eating too many clams may affect the fetus, and may cause heavy metal poisoning.
