How to make Osmanthus Angel Chiffon Cake

6. Add 20 grams of cotton sugar and beat at medium-low speed until it is smooth and tender.

7. Add the remaining 20 grams of sugar and beat at high speed until wet foam forms (pull up the meringue arrow and it will bend down)

8. Use a spatula to pick up a few scoops of meringue and add it to the egg yolk paste and mix evenly.

9. Then pour all the egg yolk paste into the meringue bowl, quickly cut and mix evenly; preheat the oven to 175 degrees

10. Pour the batter into the chimney mold, fill it 80%, scrape the surface, and tap the mold on the table a few times to shake out the bubbles.

11. Put the mold into the oven, adjust the temperature to 170 degrees, 35 minutes, upper and lower fire, put down the layer; the oven temperature here is for reference only

12. After baking, put on heat-insulating gloves, take the cake out of the oven immediately, and place it upside down; I usually use a long-necked glass bottle to invert the cake mold

13. Pour 50% to 60% whipped cream on top, smooth it with a spatula, and sprinkle with dried osmanthus.
