1. Ingredients for 3 people

1 piece of pork belly, 500 grams of flour

150g sweet noodle sauce, 350g yellow sauce, some ginger, some shallots, some vinegar, some sugar, some salad oil, some water

3. How to make fried sauce: It is actually very simple to make fried sauce with traditional Beijing sauces. The ratio of sweet bean sauce to dry yellow sauce is about 1:2 . I cooked one pound of meat and used one bag of sweet bean paste (150 grams) and one bag of dry yellow bean paste (350 grams).

Prepare the pork belly and two sauces.

Peel the pork belly and cut into small dices.

Mix the two sauces and add appropriate amount of water and stir well.

Put a small amount of oil in the pot. When it is 50% hot, add the diced meat and slowly stir-fry until the fat releases oil. When it is slightly browned, add cooking wine. Drain and set aside, leaving the excess oil in the pot.

You can add more oil, sauté the minced ginger, then add the mixed sauce and stir-fry continuously, add chopped green onions, and continue to stir-fry until the sauce and oil are completely blended.

Add the previously fried diced meat, stir-fry until the meat is evenly coated with the sauce, then add hot water, almost enough to cover the meat, add a little vinegar and a small amount of sugar, turn down the heat and simmer, stirring constantly during the cooking process to prevent the bottom from getting sticky, until the sauce becomes thick. This process lasts about 15 to 20 minutes.

Add eggs, water and a small amount of salt to the flour, mix well and knead into a smooth dough. Cover with a wet cloth and let it rise.

Take out the dough that has been proofed and place it on a panel. Use a rolling pin to roll it out, trying to make it as big and round as possible.

Roll the dough until it is about 3 mm thick, fold it into long strips, and cut it into noodles according to your preferred width.

Cut the cucumber into shreds and blanch the mung bean sprouts and set aside.

Drain the noodles when cooked.

5. How to make hand-kneaded noodles 2

The hand-kneaded dough should be hard, the harder the better, as long as it can be barely kneaded into a ball. Don't be in a hurry to knead it smooth at the beginning. After it forms a ball, let it rest for about 20 minutes and then it will be easy to make it smooth. After kneading it smooth, continue to let it rest. The longer the time, the better. Half a day or most of a day is fine.

1. When you first start learning to make hand-kneaded noodles, you may find it difficult to master the technique. It doesn’t matter. Just add water if there is too much flour, and add flour if there is too much water. You will get it just right after trying a few times. It doesn't matter if you make too much noodles. You can store them in the refrigerator and eat them whenever you want.

I make three servings, usually using 350 grams of flour, two eggs about 100 grams, and about 60 grams of water. Put the flour in a bowl, add appropriate amount of warm water and mix until there is no dry flour and it becomes floc-like.

3. Use a rolling pin to loosen it and make it thinner.

4. Then put a little cornmeal as the dough and fold it into 10 cm wide.

7. Remove from the water and rinse with cold water. Put into a bowl, add a little cucumber shreds and the sauce, mix well and enjoy the delicious noodles.
