Method 2: 1. Wash, peel and slice the purple sweet potato and steam it in a pot for 15 minutes. 2. Beat the prepared eggs. 3. Let the steamed purple sweet potato cool down slightly and mash it into a paste. Add a little bread sugar, white sugar and shredded cheese and mix well. 4. Take an appropriate amount of purple sweet potato puree and roll it into small balls with your palms. Then coat them with flour, egg liquid and bread sugar in turn. 5. After everything is processed, fry in oil until the surface turns slightly yellow (use kitchen paper to absorb excess grease after taking it out of the pan). 6. Pour ketchup on it and you can eat it. Note: When putting the purple sweet potato balls into the oil pan, be sure to put them in slowly to avoid burns.
