Homemade Breakfast Pancakes

【Homemade single pancake】

【Materials】Ordinary flour/salt/edible oil

【Specific steps】

1. Pour 300 g of flour into an empty bowl, add a little salt to the flour to increase its gluten content. Then pour 80 ml of boiling water evenly into the basin, stirring as you pour. Then pour 70 ml of cold water into the basin, stirring as you pour, until the flour becomes floc-like. After the flour is kneaded into a flocculent state, add 15 ml of cooking oil. Adding cooking oil will make the pancakes softer.

2. Knead the dough into a smooth surface, cover it with a lid and let it rest for 5 minutes.

3. Knead the dough into long strips, and then divide it into 8 or 10 pieces. Make sure to divide them into even numbers.

4. Take two doughs and roll them into two small pancakes of the same size. Then brush one of the pancakes with cooking oil and sprinkle a little flour. Brushing with oil and sprinkling with flour are both to prevent the two pancakes from sticking together.

5. Place another pancake on top of the oiled pancake.

6. Use a rolling pin to roll the two stacked pancakes into a thin pancake. Make sure it is evenly thick and as thin as possible, but the size of the pancake should not exceed the size of the pancake pan.

7. Heat the electric baking pan or frying pan. There is no need to brush oil inside the pan. Just put the pancake into the pan and cover it with a lid.

8. When one side is cooked, turn it over to the other side. When both sides are cooked, it is ready to be served. This takes about 1 minute. Don't bake it too long, or the pancake won't be soft.

9. Let the baked pancakes cool slightly, then open them from the middle. Now two pancakes are ready.

【Sweet potato cake】

【Ingredients】Flour/glutinous rice flour/sweet potato/egg/yeast/sugar

【Specific steps】

1. Pour 100 g flour, 150 g glutinous rice flour, 3 g yeast powder, 20 g sugar into an empty bowl, then add two eggs. Then add about 300 ml of warm water and stir with chopsticks.

2. Make it into a fine, slightly thick batter.

3. Seal the prepared batter with plastic wrap or cover with a lid and let it rise for 20 minutes.

4. Peel the sweet potatoes, wash them and cut them into dice. Put them into the pot after boiling water and steam them.

5. Pour the steamed sweet potato pieces into an empty bowl and use a spoon to mash them into sweet potato puree while they are still hot.

6. Preheat the electric baking pan, stir the proofed batter evenly and pour a small spoonful of batter into the baking pan. One spoonful of batter is one pancake dough. Pour 4 spoonfuls of batter in sequence to make 4 pancake doughs. Place mashed sweet potatoes on two of the pancakes and leave the other two alone.

7. After the pancakes are baked and shaped, place the pancake without sweet potato puree face down on the pancake with sweet potato puree. At this time, two round pancakes with sweet potato filling are formed in the pan.

8. Then pour two more spoonfuls of batter into the empty space on the electric baking pan to make two pancakes. Use the same method to place the mashed sweet potato on one of the pancake doughs. After the pancake is baked and shaped, place the pancake without the mashed sweet potato face down on the pancake with the mashed sweet potato.

9. Cover the lid of the electric baking pan and bake for about 3 minutes. Remove from the pan when the surface turns golden brown.

【Ham and egg pancake】

【Ingredients】Flour/eggs/carrots/ham/scallions/salt

【Specific steps】

1. Pour 150 g of flour into an empty bowl, beat in 2 eggs, add a little salt, and then pour in 170 ml of water.

2. Use chopsticks to stir evenly and make this fine batter.

3. Peel the carrots, grate them with a grater, and then cut them into small pieces. Dice the ham and cut the green onion into chopped green onions, then add all into the batter.

4. Use chopsticks to stir in one direction to mix the vegetables and batter evenly.

5. After preheating the electric baking pan or frying pan, brush a layer of oil on the bottom of the pan. Use a spoon to scoop some batter into the pan, then use a spatula to flatten it to make small pancakes.

6. Cover the pot and fry on low heat until both sides are golden brown, then you can serve.
